Oatmeal connoisseur … that’ s how I’d describe my love for oatmeal. However recently a new friend at Justin’s Almond Butter and a newly discovered blogger, OhSheGlows, taught me how to kick it up a notch. All I have to say is Yummm and enjoy.
Peanut Butter, Banana & Oatmeal breakfast
1 large very ripe banana, peeled & roughly chopped
1 tsp butter or coconut oil
1/2 tbsp peanut butter or Justin’s Almond Butter
1/2 cup rolled oats
1/2 – 1 tsp chia seed or ground flax
1 cup liquid (water or almond milk)
1 tsp cinnamon
pinch of nutmeg
pinch of salt
1 tsp vanilla extract
Toppings: peanut butter, nuts, maple syrup
- In a medium-sized pot over medium heat cook the banana and butter or coconut oil, about 5 minutes.
- Stir in 1/2 tbsp peanut butter and add the oats, chia, liquid, spices, salt and vanilla. Whisk until combined.
- Bring to a low boil and reduce heat to a simmer, stirring often for 8-10 minutes. Remove from heat.
- Scoop into a bowl and add toppings.
- Enjoy.
