Sauteed Bananas

    Thank you May G. for suggesting that my vegan Lenten adventure should include sauteed bananas.

    They prove to be a healthy, good quick fix for my overbearing sweet tooth.  It is simple to make and perfect lunchtime dessert.  For those interested, here’s the recipe.  Enjoy.

    First, cut one banana in half (crosswise) or bite size circles.
    Second, heat a sauce pan at medium heat with one or two tablespoon of coconut oil
    Third, saute bananas till their golden brown (about 2-3 minutes)

    foiled banana boatTo pack for lunch, place the hot bananas in foil coated with brown sugar and pecans – don’t go crazy with the brown sugar.  Just add enough to lightly coat the banana.  Then wrap it up, and serve later for dessert at lunchtime.

    This took all of 5 minutes to make, and it stopped any sweet-tooth cravings all afternoon.  If you have a healthy, easy dessert recipe please share.  I’m open to all suggestions.
